The Carthusians undertook the management of agriculture inside the territory through the Grange, a sort of  farm house presided over by a lay brother known as Grangerius.


In the plains around Cuneo, following on from a huge operation in which all property was incorporated, farm holding s of notable dimensions were created centred around the an important grange known as Tetti Pesio where it is still possible to find signs of this glorious past.


Besides, having de forested some areas around the monastery the monks constructed numerous farm buildings with rational construction techniques demonstrated by the remains of a large barnfound at the centre of the panoramic plain of  S. Michele.


Legend has it that the milk produced from these buildings and pastures was piped directly to the monastery through a kind of milk duct.
